THE CHEF
Chef Javier Ornelas was born and raised in Mexico City, and attended CESSA, the premier culinary school in Mexico. In 2005, he moved to Tulum and opened Ginger, a restaurant and bar that quickly became a favorite for tourists and locals. Ginger accumulated awards and great reviews in publications like the New York Times and Fodor´s travel guides.
THE FOOD
We use the freshest ingredients available, and organic local products whenever they are available. We buy local fish from the local fisherman, never frozen fillets.
We work with just about any protein you can think of, as well as a variety of fresh vegetables. Chile is indispensable in Modern Mexican food, but never overpowers the food; it is used to maximize flavor.
We are happy to work with you to come up with great menus for your entire wedding weekend! We can accommodate any dietary needs, and have extensive options for vegetarians and vegans.

ANSWER YOUR QUESTIONS
- HOW CAN WE HIRE YOU FOR A WEDDING?
We ask for a $500 usd deposit to block a date in our calendar. We don't do more than one wedding a day, to have our A-team on site for your special day. The deposit is refundable up until 6 months before the event date, minus any fees incurred for money transfers.
- CAN WE DO A TASTING, TO TRY THE FOOD?
Yes, absolutely! The tastings cost $75 usd for two people, and include 5 plates; two ceviches, two fish dishes, and a beef dish. The tastings also include all of our specialty cocktails. If you do end up hiring us, we discount the cost of the tasting from your final bill.
The tastings are a set menu, so that you can see the presentation of the plates and see how our food is cooked. If you want to try particular plates that are not part of the set menu, we can send you a personalized quote.
- WHAT DO YOUR SERVICES INCLUDE?
Our food services include our transportation (up to and including Akumal; any farther from Tulum incurs a travel fee), our kitchen staff, our waitstaff, the food, silverware, and plates. Our bar services include bartenders, other bar staff, glasses, ice, mixers, and garnishes.
